The Queen of Chocolate, Kirsten Tibballs, returns to InterContinental Fiji Golf Resort & Spa

Thursday, 5th March 2026: InterContinental Fiji Golf Resort & Spa will welcome acclaimed Australian pastry chef and chocolatier Kirsten Tibballs for her third consecutive year in residence. Known as The Chocolate Queen, Kirsten returns for a limited-time residency, presenting a series of dessert-led experiences from 23rd - 28th March, 2026.

As part of the residency, Tibballs has created an exclusive signature dessert for the resort’s Signature Restaurant, Navo, open for dinner 5:30pm-10:30pm. The “Fiji Totoka” will be served on 25 and 26 March, featuring a delicate macaron with vanilla chantilly cream and passionfruit curd.

On 25 March, 2pm-4pm, Tibballs will host a complimentary live Easter demonstration for the first 20 guests, showcasing how to create a Chocolate Easter Egg with Bunny Ears.

A few days later, on the 28th, she will appear at the sunset soirée on Kama Beachfront from 5pm-9pm, serving a bespoke Mojito Trifle. Prices start from AUD $36 for children and AUD $75 for adults.

For guests of Club InterContinental, a complimentary High Tea on 27 March, between 2pm-4pm will be run, featuring Banoffee Chocolates, Breton Orange Meringue Tart, Chocolate Macarons, Passionfruit Choux Buns, Passionfruit Marshmallows and more.

A portion of sales from selected experiences will also support Daulomani Safe Home, with FJ$5 from each sale donated to the organisation, helping provide shelter and safety for women, children, and members of the LGBT+ community in vulnerable situations.
