5-course Food & Wine Menu

Established in 1998 by the de Beaurepaire family, De Beaurepaire Wines produces elegant French styles of wine from grapes grown on their 55 hectare single estate vineyard in Rylstone, NSW. The family pioneered Rylstone as a wine region because they discovered an ancient limestone rich terroir with shallow sandy soils and ultra-cool inland climate similar to their homeland of Burgundy. “As stewards of our land & honouring our Burgundian forebears, we pursue a French winemaking style. An elegant, balanced & age-worthy style that captures the exceptional character of our special limestone-based terroir, celebrating the variations of each vintage with the minimum of intervention”

The event will be hosted by William de Beaurepaire of de Beaurepaire wines along with our brigade of talented Chefs under the leadership of Executive Chef David Bell.

The 5-course tasting menu will showcase the below food & wine matches:

1st Course | Le Comtesse: Chardonnay

cured in local bush lemon, bell pepper, coriander and lemon grass

on garlic puree with wine wine cream and grilled cheese  

2nd Course | Le Bourbon: Rose 
VOL-AU-VENT CHICKEN SUPREME  
Poached chicken in béchamel sauce baked in puff pastry  
TUNA NICOISE SALAD  
green beans, olives, capers & tomato, with boiled egg, potato and pesto  

3rd Course | Le Chevailier: Merlot – Cabernet  
LOVO LAMB 
on Fijian spiced palau and yogurt dressing  
MUSHROOM CROQUETTE  
green pea mousse & roasted tomato chutney  

4th Course | Victor: Cabernet Sauvignon  
BEEF CHECK BOURGUIGNON
